Super Quick Bombay Potatoes

Finger food recipe - Suitable for 1-3 year olds

Bombay potatoes are a delicious snack or wonderful accompaniment to a larger family meal. The potatoes are usually fried to crisp them up, however, this recipe DOES NOT  involve any frying to keep this snack as healthy as possible for baby.

I served this up to my daughter the other day and there was a lot of delightful 'umm...ing' going on and she polished off the whole potato!

- SuperFoods included – white potato, olive oil, garlic, ginger, tomato

- SuperSpices included – brown mustard seeds

This snack is bursting with lots of white SuperFoods, all high in antioxidant activity. It is also carb-charged suggesting your little one will have lots of energy necessary for playing and running around (perhaps I should have some too! Ha!). Potassium from the potato is also necessary for the heart and the function of all other internal organs.

Not forgetting the SuperSpice, mustard seeds, these are antioxidant and rich in selenium, an anti-cancer mineral also found in chicken!!

Makes 1-2 servings. Total cooking and preparation time: 15mins.

Ingredients

  • 1 white potato – washed, peeled, cut into 1” cubes
  • ½ tbsp olive oil
  • ¼ tsp brown mustard seeds
  • ¼ tsp minced garlic
  • ¼ tsp minced ginger
  • 1 tbsp tomato puree

Method

Place the potato cubes in a pot, cover with water, bring to the boil and simmer until tender. Drain and set aside.

Heat the oil in a frying pan on medium heat and add the mustard seeds. When they begin to sizzle and pop, turn to low heat and add the garlic, ginger and stir-fry for a few secs.

Add a splash of water (be careful of the sprays and sizzles), the tomato puree and stir-fry until the tomato puree and water combine to form a sauce/ masala.

Finally add the cooked potato cubes to the frying pan and combine with the masala. Cook together for a further few seconds and remove from the heat.

Serve to baby warm.
