Spiced Santa Pudding Pies

Santa Spiced Pudding Pies

This is a great little recipe to help you get into the Christmas spirit and it doesn’t take up too much of your time either! With a hint of Indian spices running through the pie, it simply adds a new taste to a very simple meal.  Your little one will love it! As did mine - you can see a pic of her destroying it at the bottom of this post, complete with eyes closed! This recipe is also great for whipping up quickly if your little one has some friends over.

This meal is protein-rich so is excellent for growing children. In fact I happened to see this floating around on twitter and thought I’d include it in my post to help prove my point – thank you Kelloggs!

A very easy meal that should take no more than 15-20 minutes to prepare. Slightly more if you are cooking with either beef or lamb mince.

Makes 4 pies. Total preparation and cooking time: 15-20mins

  • 1 tbsp olive oil
  • 1 small onion – peeled, chopped
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tsp cumin seeds
  • 200g (7oz) lean minced chicken
  • 1 tomato – washed, chopped
  • 1 tsp tomato puree
  • ¼ tsp ground turmeric
  • Salt to taste (optional)
  • 4 x Yorkshire puddings – baked from frozen
  • 4 tbsp mashed potato – homemade or ready-made
  • Garden peas and sweet corn to decorate

Heat the oil in a pot and add the onion and stir-fry until soft and golden, then add the garlic, ginger, cumin and mince - stir-fry for around 5-6 minutes until the mince is sealed (breaking lumps with a spoon). Then add the tomato, tomato puree, turmeric and salt. (You may need to add a little water if cooking beef or lamb). When the meat is thoroughly cooked, remove from the heat and set aside.

Fill one ready-baked Yorkshire pudding to the top with the mince and cover with one tablespoon of mashed potato. Repeat for the other three. Decorate with pea eyes and the sweet corn smile. Feel free to serve with a touch of gravy too. Enjoy warm.

Time Saving Tip Badge

Bake the Yorkshire Puddings in the oven (according to packet instructions), and boil or steam the potatoes (if you are cooking homemade mashed potatoes), whilst you are cooking the mince. It will save you time and ensure everything is ready together.
